My current research interests are mainly related to these topics:
1. Studies on the nutritional properties of pigmented and non-pigmented rice varieties e.g. antioxidant properties and amylose content using multi-omics approaches.
2. Investigating the health-promoting effects and beneficial gut microbiota shaped upon the consumption of functional fermented fruit beverages enriched with active ingredients.
