Dr. Wenceslao Moreda, obtained his degree in Chemistry from the University of Seville in 1988 and his Ph.D. from the University of Aberdeen, United Kingdom in 1995. He joined the Instituto de la Grasa of the Spanish Council of Scientific Research (CSIC) in 1996 as postdoctoral fellow. In 2001 he obtained his permanent position as Researcher in the Department of Food Quality and Characterization. The main lines of research he has developed in the last 15 years include, the development of analytical methods for the control of the quality and purity of olive oils, the authenticity of olive oils for the detection of fraud, reactions and chemical modifications of the constituents of food, functional foods, sensory and volatile analysis, residues and contaminants in olive oils and the relationship of technological processes with the quality of olive oil. He was head of the panel of the Sensory Panel of the Instituto de la Grasa, panel recognized by the IOC, accredited by ENAC (ISO 17025) and Official Panel of the European Union for 10 years. He is an active member of several committees of experts, including the Committee of Chemical Experts, the Committee of Sensory Experts and the Committee of Experts on Residues and Contaminants of the International Olive Council (IOC). He also participates in the Expert Chemistry group of olive oil in the European Union. Represents AENOR (Spanish Standardization Organization) in the TC34 / SC11 of fats and oils. He has published numerous scientific articles in relevant journals and proposed many of the standard methods included in several regulations. He has actively participated in IOC training activities in several member countries in aspects of chemistry and sensorial evaluation of olive oil. He is a researcher responsible for several research projects on the characterization of olive oil. He is a CSIC representative in the OLEUM project of the H2020 program.
