Professor Selli explores the screening, identification and quantification of volatile organic compounds, waste management and bioactive compounds such as phenolics in food samples. His research is primarily concerned with the characterization of key odorants. With the aid of GC-MS-Olfactometric techniques combined with sensory directed approach of Professor Selli's published paper has focused on understanding the key odorants of the different food samples,
