I am a researcher in the field of Food Engineering and processing, and I had the opportunity to work and collaborate internationally with several research groups, contributing in the overall understanding of the encapsulation of bioactive molecules and modeling of the release of the encapsulated compounds. Also, I work on rheological, textural and physical products and I have many studies on heat and mass transfers of the food process engineering and chemical products.
