Experience: i) obtaining and techno-functionality assessment of food polysaccharides, proteins, and peptides, and also their interactions with food additives, vitamins and toxicants; and ii) application of in silico molecular modeling (protein-ligand docking, molecular dynamics, DFT-based methods) as a tool to study structure/interactions/properties relationships of food biomolecules.
