Vladimiro Cardenia currently works at the Department of Agricultural, Forest and Food Sciences DISAFA, University of Turin. Vladimiro does research in Food Science and Technology, Lipidomics and Analytical Chemistry. The research interests are mainly focused on: food lipids, especially on their composition; degradations caused by processing and preservation; chemical analysis of food and food-stuffs; qualitative and quantitative determinations of bioactive compounds in agrifood by-products and waste; lipid analysis of food related to human health, including gender variable; lipidomic and lipid oxidation in model and in vivo system.
Their current projects are focused on food waste/by-products and hemp (Cannabis sativa L.).
