Omar Penarubia

Omar Riego Penarubia currently works as Fishery Officer at the Food and Agriculture Organization of the United Nations based in Rome, Italy. He works on projects involving fish post-harvest technology, fish loss and waste and fish waste valorization. He previously worked at the Department of Science and Technology - Food and Nutrition Research Institute in the Philippines where he conducted studies on sorghum flour and starch process and product optimization. He finished his master studies under Erasmus Mundus Programme on Food Science, Technology and Nutrition (SEFOTECHNUT) hosted by KU Leuven (Belgium), Universidade Catolica de Portugue - Porto (Portugal) , Dublin Institute of Technology (Ireland) and Hohschule Anhalt/Anhalt University of Applied Sciences (Germany)
