My research is carried out in the context of obtaining and purifying bioactive compounds, as well as isolating lactic acid bacteria from traditional foods, both for the development of functional foods. The work is developed in the Laboratory of Research and Development of Functional Foods of the University of Sciences and Arts of Chiapas.
