Author and co-author of 64 scientific papers on topics related to food safety and microbiological characteristics of food of animal origin (cheese and dairy, meat and fishery products, prevalence, identification and serotyping of phatogens in cheese-making plants and in sheep cheese, detection of enterotoxins and virulence genes of S. aureus, characterization of meat products, antibiotics resistance, occurrence of aflatoxin M1 in milk and ripened cheese.
Research
Research activities are focused on food safety and microbiological characteristics of Food of Animal Origin, with regard to dairy, fish and meat products. Main topics: hygienic and microbiological characteristics of milk of small ruminants; impact of animal health status on quality and composition of sheep milk; Coagulase Negative Staphylococci as causative agent of udder infection in small ruminants; abiotic contaminants of raw milk (residues of veterinary antibiotics, M1 aflatoxin); Characterization and population study of S. aureus isolated in the dairy supply chain; shelf-life and safety of traditional and innovative whey products; Listeria monocytogenes contamination in cheese-making plant and sheep cheese milk
