Dr. Angel H. Cabrera-Ramirez conducts research in three main areas: 1. The impact of food processing on its major components (i.e., carbohydrates, proteins), as well as its bioactive compounds and their bioaccessibility and bioavailability, both in vitro and in vivo assays; 2. The impact of processing on the physicochemical, structural, rheological, and techno-functional properties of biopolymers such as starch; 3. Obtaining functional ingredients from vegetable wastes of the food industry.
