Novel extraction, purification, and processing technologies for plant proteins

Plant-based proteins have potentially positive effects on human health. However, these positive effects depend on their genotypes and purity. To obtain plant proteins with high purity and multifunctionalities, various extraction, purification and processing technologies have been applied. The aim of this chapter is to discuss the application of the abovementioned treatments including their principles, impacts and limitations. Compared with traditional extraction technology, some advanced technologies such as ultrasound, microwaves, and high hydrostatic pressure have been successfully used for extraction with high protein yields and short extraction times. To further improve the purities and strengthen the applications of the crude extracts of plant-based proteins, ion chromatography, affinity chromatography and magnetic adsorption have been used to obtain proteins with high purity and stable physicochemical properties. Additionally, electrospinning, shear cell and extrusion technologies can be used to produce different products made of plant-based proteins by modifying their states.
