摘要
•Banana was structurally categorized for the first time as type-4 amylopectin.•Banana and potato exhibited a larger number of B3-, L- and BL-chains than maize.•A greater tendency to form double helices was found in waxy potato than banana.•Retrograded banana amylopectin was more resistant to digestion than waxy potato.•Higher lateral packing of double helices in banana during retrogradation is suggested.
