However, formulating products with characteristics similar to cheese made with animal milk is still a challenge for researchers and industries. Here we will describe the process of obtaining probiotic pea cheese, probiotic tofu, probiotic soy-based cream cheese, and probiotic chickpea petit suisse cheese.
