Comparative study of the nutritional composition, antioxidant and sensory in Chaetostoma fischeri and Saccodon wagneri in La Man?, Ecuador

Given the importance of freshwater fish in the diet of Ecuadorians, there is an urgent need to know more about the quality of meat from native fish species in Ecuador; therefore, a comparative study of the nutritional composition, antioxidant and sensory in campeche (Chaetostoma fischeri)and chola (Saccodon wagneri), coming from different rivers in La Mana, Ecuador, on the summer season. The average weight of C. fischeri was 450.5 grames (g) and length 151 centimeters (cm) and in S. wagneri is 420.5 g and 141 cm. A completely randomized design was used, with three replications, where the variables under study were arranged in a 3x2 bifactorial form (Factor A=Quindigua, Calope, San Pablo; Factor B = C. fischeri and S. wagneri). The chemical evaluation in C. fischeri had the highest level in moisture (79.27%) and protein (27.36%), while S. wagneri in dry matter (32.80%), lipids (8.74%), ash (9.14%) and in non-nitrogenous elements (25.11%). Regarding antioxidant activity, they showed a high superoxide dismutase (SOD) activity in C. fischeri (7.63 units. milligrams-1-U center dot mg-1- protein) compared to S. wagneri (12.60 U center dot mg-1 protein). Atomic absorption determined the amount of mercury in the campeche (49 micrograms center dot kilograms-1-mu g center dot kg-1- and in the chola (48 mu g center dot kg-1). In the present study, there was river x species interaction with the best performance for C. fischeri in the Quindigua and Calope rivers in terms of chemical composition, antioxidant activity and sensory analysis, with the highest values in protein, low in lipids, adequate results in terms of odor, color, texture and acceptability.
