Inverse And Dose-Dependent Association Between Fiber Intake And Ultra-Processed Food Consumption In The General Population Of Switzerland
Clinical Nutrition ESPEN(2023)
摘要
Rationale: Adequate intake of dietary fiber is important for health and well-being. Ideally, dietary fiber requirements are covered with minimally or unprocessed foods rather than with ultra-processed foods (UPF). UPF usually have a high energy density, added consumption promoting substances, such as salt or sugar, and low satiating capacity. Recent studies have shown that UPF can promote obesity despite their high fiber content. To date, little is known by which food groups the dietary fiber requirements are covered.
