•· The peptide AW and its oxidized form AWox, were quantified in Spanish dry-cured ham.•· No statistical differences were found between both species’ concentrations.•· Oxidation of AW altered its antioxidant potential depending on the assay.•· Oxidation of AW reduced its antihypertensive potential.
