摘要
•Goat milk proteins were mixed with Agaricus blazei Murrill (ABM) extracts.•ABM extracts significantly changed the particle size of thermally treated samples.•Milk proteins structural changes and the new bonds with ABM extracts were observed.•Electrophoresis indicated the casein hydrolysis in the presence of aqueous extract.•Different microstructures of mixtures with ABM extracts were found by SEM.
