Economic considerations in potato production

This chapter provides an overview of economic issues relating to pricing and production of potatoes grown for seed, fresh, frozen processed, and chipping markets. A review of potato storage economics is also included. A discussion of the role of grower formed cooperative bargaining associations in frozen processed contractual negotiations and supply management programs for fresh potatoes is provided. The chapter concludes with an overview of factors affecting current and future demand for potatoes and potato products.
