•Hypoxia is common in gastrointestinal (GI) cancers and causes metabolic heterogeneity.•Both hypoxia and metabolic layouts in the tumor are dynamic and support tumor growth.•Metabolic rewiring of hypoxic cancer cells and immune cells promotes immune evasion.•Combined immunometabolic therapeutics hold promise in treating hypoxic GI cancers.
