Abstract
•Red pitaya was used to obtain the MRPPC.•The complete characterization of MRPPC was described for first time.•UPLC-ESI-QTOF-MSE was effective for the determination of twenty metabolites.•Sensory analysis revealed that the MRPPC was useful as a food colorant in yogurt.•MRPPC is promising food ingredient as a natural red/purple colorant.
