摘要

•Polyols induce a significant decrease of enthalpy relaxation in gelatine films in the glassy state.•The decrease of enthalpy relaxation may be related with polyols acting as enhancers of molecular packing.•Structure tuning of gelatin in the glassy state by addition of polyols.
