摘要
•The phenolic composition of different treated rapeseed meals was studied.•Industrial scale treatments were done in order to promote canolol formation.•Thermal treatments and hydration of the meal were the parameters studied.•Canolol can be degraded by high levels of temperature and exposure time.•Canolol content was not mostly impacted by hydration treatment but by thermal effect.
