大曲主要含有霉菌、酵母菌、细菌等多种微生物及它们产生的各种酶类,是一种多菌种的混合粗酶制剂。通过现状调查及分析确定了冬季大曲量低质差的原因,提出了冬季大曲增产提质的具体措施,使冬季成品曲产量提高27%、成品曲糖化率提高65个单位、感官评分提高1.8分,并有效增加曲中有益微生物的数量。
