个人简介
I'm PhD in Chemistry with an extensive postdoctoral experience in aroma analysis of food products, mainly in alcoholic beverages (wine, beer and spirits). I have worked in numerous projects focused on the development of analytical methods for aroma analysis (by GC-MS), and on the study of the elaboration/processing effect (winemaking and distillation) on the chemical and organoleptic characteristics of products.
During the last years, my work has been focused on the improvement food safety framed in two approaches: 1)the removal of toxic compounds (biogenic amines) from food matrices (wine) by adsorption on solids and 2)the chemical degradation of toxic compounds (mycotoxins) in food products.
