Abstract
•Yacon is rich in polyphenols, fructooligosaccharide which leads browning reactions.•Different pre-drying treatment with anti-browning agents were applied to yacon slices.•Dipping with KMS (0.3%) with citric acid (0.05%) for 20 min was most effective.•Mechanical cabinet drier (60 °C) showed best quality yacon powder with less browning.
