•Activated carbons were synthesized from sucrose using PCH as template.•Physicochemical properties can be controlled through synthesis conditions.•The pretreatment with KOH improve textural properties at lower temperatures.•Materials synthesized with KOH exhibited stronger adsorbate-adsorbent interactions.
