摘要
Cereals are the main source of food and nutrients for humans. The development of industrial and agricultural activities, urbanization, have led to an increase in toxic contaminants in the environment. Thus, once in the environment, these contaminants are accumulated in food crops, and therefore reach the human body through food consumption. Given the high consumption of cereals and cereal-based by-products, they can pose a significant risk to the population, especially children.
