据韩国、中国台湾等国家和地区的规定,食醋中不得检出丙酸,致使中国近年来多批食醋产品因检出丙酸遭到退货或销毁. 基于此,本文对发酵、加工、陈酿过程中丙酸含量的检测及酿造不同阶段的丙酸含量变化规律进行分析,初步探讨了丙酸生成机理.
