•Novel medium-long-medium structured triacylglycerols (MLM-STAGs) are obtained.•The monoacylglycerols yield attained is 31.44–36.08 wt%.•MLM-STAGs contain 64.28% caprylic acid and 13.35% ω-3 polyunsaturated fatty acids.•Caprylic acid-stearidonic acid-caprylic acid is one of the major MLM-STAGs present.
