•Most cell walls in pear flesh come from stone cells.•Parenchyma cells have higher pectin contents.•Stone cells have higher cellulose and xylan contents.•Skin cell walls have higher lignin and lower pectin and cellulose contents.•The loss of arabinogalactan side chains was prominent in parenchyma cells.
