摘要
•Consumption diversity and frequency of pulses are significantly higher in Spain, whereas in Germany and Denmark, consumers are aware of pulses, yet consume significantly less.•Health benefits of pulses are amongst the main drivers of consumption in all countries investigated, though drivers considering environmental advantages of pulses played a tangential role for consumers.•Barriers involving sensory and preparation properties are apparent in Denmark, and the UK, while digestive problems hinder an incorporation of pulses for German, Spanish, and Polish participants.•Drivers and barriers were correlated with diversity and frequency of consumption, indicating that knowledge does not affect attitudes as much as experience does.
