•Ionic liquids (IL) solvation ability towards polyphenols was studied through NMR.•Molecular interactions were evaluated with polyphenol-like compounds.•ILs with strongest molecular interactions extracted more polyphenols from matcha.•Best IL solvents are imidazolium derivatives with shorter alkyl side chains.•Best IL solvents solvents have weakly basic anions.
